We made it to Duluth yesterday(the 12th). Got into town around 10:30am and headed our hungry stomachs straight to the Northern Waters Smokehaus for some delicious smoked salmon sandwiches. We always try to stop here when coming to Duluth because they have some of the best sandwiches on the planet. They smoke all of their own fish and meats, most of which are local. One of my favorites is the Cajun Fin. This sandwich combines thick cut Cajun smoked salmon, scallion cream cheese, Pepperoncinis, and roasted red peppers to satisfy your taste buds. After devouring our food, we went to Goodwill and got material for making curtains. After spending our first night in the Walmart parking lot we realized we would be needing something to block outside light and to give us a little bit of privacy.
We then were able to visit with friends the rest of the afternoon. We stopped over at my sister's house first, went on a hike in Chester Bowl, and then went to the Burrito Union for some beers and a salsa sampler with Ilsa. After spending a few fun hours chatting with Ilsa we headed up to Anna and Laura's to get ready for a night of camping.Anna, Nicole, Morgan, and myself decided to drive a little way up the shore to the Knife River. We got a bit of a late start, so by the time we got out to the Superior Hiking Trail it was dark. No biggie, we strapped on our headlamps and hiked about a mile until we came to the perfect campsite near a waterfall. Morgan started the fire and got dinner going while us ladies set up the tents and got the whiskey cokes poured. We enjoyed some; mac 'n cheese, chips, salsa, baked potatoes, Jameson, and Grainbelts for dinner around the fire and then the rain started. So, we cozied up in Anna's tent. The night was filled with lots of laughter, Anna and I trying to learn new card games, and Nicole's(somewhat scary) story telling. It was an awesome night in the woods and the perfect way to say goodbye to Duluth for a little while.
